What better way to celebrate the end of summer than with an obnoxiously thick slice of watermelon.
My daughters birthday is also her first day back to school this year. She absolutely adores watermelon and we can't get her to stop eating it when it is around. This cake is for her to take to school and share with her new classmates.
I have to admit I got lazy and didn't feel like making black fondant, so the seeds are just chocolate chips. I also didn't feel like making multicolored fondant so I layered it. Does that make me a bad cake decorater? Probably, but I doubt the preschoolers will care.
